As autumn arrives in Korea, it brings a nostalgic reminder of the once-common tradition of gathering with family and friends to make kimchi. Times have changed, though. A recent survey shows that only 8.1% of people continue this homemade tradition, while a striking 88.2% prefer buying 'pre-made kimchi', reflecting the increasing number of single-person households and a growing preference for convenience.

Enjoying Pre-Made Kimchi 

Purchasing pre-made kimchi can sometimes be challenging, especially when deciding how much to buy and how best to store it. Keeping kimchi fresh and tasty is all about choosing the right quantity and using effective storage methods. Let’s look at some helpful tips for making the most out of pre-made kimchi:

#Finding the Perfect Quantity

It can be tricky to gauge the right amount from the 'kg'(lbs) labels on packages. While it varies per individual, on average, 3kg(6.6lbs) of kimchi is suitable for a four-person household for a month. Single households might start with 500g-1kg(1.1-2.2lbs), and two-person households with 1-2kg(2.2-4.4lbs), adjusting as needed.


 

#Airtight Storage

Once your kimchi arrives, transfer it to a kimchi container. Exposure to air can spoil kimchi faster. Gently press the kimchi under its brine when transferring. This is similar to the traditional method of placing a stone on top in a kimchi jar. Filling the container up to 70% and covering it with pickled cabbage leaves or plastic helps in blocking air.

#Maintaining a Constant Temperature 

Preserving kimchi's flavor requires not just airtight storage but also consistent temperature. The ideal range is between -1.5°C(34.7°F) and 4°C(39.2°F). For frequent use, store a small portion separately. If you don't have a specialized kimchi refrigerator, setting a section of your fridge to 0°C and placing the kimchi deep inside can be effective.

With the rising popularity of pre-made kimchi, we see an emergence of unique varieties, moving beyond traditional perceptions. Let’s explore some current kimchi trends:

#Premium Hotel Kimchi

Like in other food sectors, 'premiumization' is a key trend in kimchi. Famous hotels have started offering their own branded pre-made kimchi. For instance, Westin Josun Hotel's "Josun Hotel Kimchi" has become popular for its crisp texture and balanced seasoning, though it may be too spicy for children.

#Fiery Flavor Kimchi

Following the trend of intense flavors, like fiery chicken noodles and spicy tonkatsu, kimchi has also become spicier. "Seonhwadong Spicy Sil-bi Kimchi" is gaining popularity on YouTube and social media for its robust spice derived solely from chili powder, without the use of capsaicin, offering a fresh, salad-like experience.

#Vegan Kimchi

For those put off by the distinctive smell of 'jeotgal', the traditional Korean fish sauce used in kimchi, vegan kimchi presents an appealing trend. This fish sauce-free version delivers a cleaner, fresher taste profile. KimsClub and Jongga's Collaboration 

In the evolving landscape of kimchi trends, brands are not only innovating but also expanding their global reach. This was evident when Jongga, a premier kimchi brand commanding over 40% of the domestic pre-made kimchi market, launched an intriguing pop-up store in Seongsu-dong. Jongga's global impact is significant; in August 2022 alone, their kimchi export revenue amounted to $27.72 million, constituting a substantial 60% of Korea's total kimchi exports of $46.20 million. This underscores not just their domestic dominance but also their international appeal in the culinary world.

Jongga and KimsClub have collaborated on a new product, "Refreshing and Delicious Whole Kimchi." This product, unusual for Jongga, which typically does not produce kimchi for other brands, combines Central Korean style kimchi with anchovy fish sauce to enhance its flavor. Suitable for side dishes, boiled pork, and stews, it uses top-grade domestic ingredients like cabbage, fish sauce, and chili powder. Available in 3kg(6.6lbs) packages, it's suitable for a four-person household for a month. Pre-orders start from the second week of November at KimsOasis.

Despite the declining tradition of making kimchi at home, it remains an irreplaceable part of Korean dining. Now, even without preparing it traditionally, one can easily enjoy delicious kimchi.
