Clingstone Peachand Freestone Peach are abbreviations for "soft peach" and "freestone peach," respectively. Clingstone peaches have a soft and tender texture. They have a stronger sweetness and are juicier compared to freestone peaches. In the first 3 to 4 days after harvesting, they may have a firmer texture, but they become softer as they ripen. On the other hand, freestone peaches have a crisp texture. Even when touched by hand, they are firm unlike clingstone peaches.

These two (clingstone and freestone peaches) have divided preferences depending on personal taste. According to a peach quality preference survey conducted by the Gyeongbuk Agricultural Technology Institute, those in their 30s and younger prefer a crisp texture, while those in their 40s and older prefer a soft texture.

Peaches become softer as they ripen, so it may be tempting to think that the difference between clingstone peaches and freestone peaches is solely based on ripeness. However, clingstone peaches and freestone peaches are actually different varieties. There are around 300 peach varieties cultivated worldwide. Familiar names like Baekdo and Hwangdo are representative clingstone peach varieties. On the other hand, there are freestone peach varieties such as Daewol, Wolmi, and Madocha.

#What is the Perfect Peach?
When selecting peaches, it is best to choose ones without any bruises or blemishes and with fresh stems. Peaches with bruises or injuries can quickly become mushy and develop mold compared to other fruits. You can also assess the freshness of a peach by its stem. If the stem is detached from the peach or shows signs of damage, there is a higher chance that the flesh inside is also spoiled. It's recommended to choose peaches where the stem emits a sweet aroma, indicating their ripeness.

#How to Store Peach Properly
For ripening and storage, it is recommended to individually wrap peaches in kitchen towels and store them in the refrigerator. This can keep them fresh for up to two weeks. If the peach is not too firm, it is advisable to ripen it at room temperature. Ripening enhances the sweetness of the peach. Depending on its condition, ripening for approximately 2-3 days is suitable. When ripening, place the peach with the stem end facing downward in a well-ventilated area. Peaches have a higher sugar content at the bottom, resulting in a sweeter taste. However, they can also soften quickly, so it's best to avoid placing them directly on the bottom surface.
#The Best Way to Enjoy Your Peach
There is a special way to enjoy peaches in their most delicious state. It involves placing a ripening peach at room temperature in the refrigerator for about an hour before eating. Clingstone peaches taste best at around 11-13°C (52-55°F), while freestone peaches are ideal at 8-10°C (46-50°F). There are also recipes that take advantage of these peach characteristics. One example is "Greek Momo," where you combine peaches and Greek yogurt, refrigerate them together, and then enjoy. The recipe is simple to make.

1. Cut off the stem end of a thoroughly washed peach and scoop out the area around the pit to create a hollow space.
2. Fill the hollow space with Greek yogurt.
3. Wrap it and freeze for about an hour. The peach will not freeze completely, but the yogurt will become firm.
4. Arrange granola beautifully on a plate and place the peach on top. And you're done!

#Bergpfirsich
Bergpfirsich, known as UFO peaches or doughnut peaches due to their flattened shape that resembles being pressed with a hand. Despite being originally from China, they are popular in Europe and referred to by their German name. They have a high sugar content, measuring around 14-15 Brix, resulting in a strong sweet taste, and they are rich in juice due to their high moisture content. Recently, a local farm in Korea has developed a Korean version of flat peaches called "Daegukcheon."

#Shin-bi Peach
Shin-bi peaches resemble the Cheondo peach. They have a reddish color on the outside like Cheondo, but their flesh is white and tender, similar to the clingstone Baekdo peach. They do not have the characteristic fuzz of peaches, making them suitable for individuals with peach allergies. Due to their limited harvest period, which lasts only about seven days from mid-June to the end of the month, they are not easily found in local markets or grocery stores. They have a shorter shelf life compared to regular peaches, lasting around 2-3 weeks. Similar to flat peaches, they are known for their rich juiciness and high sugar content, making them increasingly popular recently.
